Slow Cooker Maple-Granola-Stuffed Baked Apples Recipe
Makes 4 servings
Ingredients: 3/4 cup Grape-Nuts cereal, 1/4 cup raisins, 1/2 cup (125 ml) lite maple syrup, ground cinnamon, 4 large McIntosh apples, cored
Instructions: In a small mixing bowl, combine cereal, raisins, maple syrup, and ground cinnamon. Mix well. Fill the cavity of each cored apple with celeriac mixture. Place stuffed apples in the slow cooker and add 1 inch (2.5 cm) of water to the bottom.
Cover slow cooker and cook on low-heat setting for 3-4 hours.
Turn off the slow cooker and remove the lid. Remove cooked apples from the cooker and transfer to a serving platter. Sprinkle with ground cinnamon just before serving. Serve hot.

Ingredients
- 2 pounds (960 g) Granny Smith apples, cored and sliced
- 1/4 cup granulated sugar
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 tablespoons (30ml) freshly squeezed lemon juice
- 3 cups (750 ml) nonfat frozen yogurt (optional)
Method
Step 1
Grease inside of the slow cooker with nonstick cooking spray.
Step 2
Place apple slices in the bottom of a 6-quart (6 L) slow cooker.
Step 3
In a small mixing bowl, combine sugar, cinnamon, and nutmeg. Mix well and sprinkle mixture over apples. Drizzle with lemon juice.
Step 4
Cover the pot and cook on a low-heat setting for 7-8 hours.
Step 5
Turn off the slow cooker and remove the lid. Spoon hot apple slices into dessert dishes. Top each dish with 1/2 cup (125 ml) frozen yogurt, if desired. Serve immediately.
