Slow Cooker Beef and Bean Soup Recipe

Ingredients

  • 8 cups (2 L) water
  • 1 pound (480 g) meaty beef chunks
  • 2 cans (15 oz (450 ml)) each kidney beans, rinsed and drained
  • 14½ oz (435 ml) can stewed tomatoes
  • 1 cup sliced carrots
  • 1 cup cubed potatoes
  • 1 cup chopped onions
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme leaves
  • 1 bay leaf
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a 6-quart (6 L) slow cooker, combine all ingredients, except seasoning. Mix well.

Step 2
