Slow Cooker Beef and Bean Soup Recipe

Ingredients
- 8 cups (2 L) water
- 1 pound (480 g) meaty beef chunks
- 2 cans (15 oz (450 ml)) each kidney beans, rinsed and drained
- 14½ oz (435 ml) can stewed tomatoes
- 1 cup sliced carrots
- 1 cup cubed potatoes
- 1 cup chopped onions
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme leaves
- 1 bay leaf
- salt and freshly ground black pepper, to taste
Method
Step 1
In a 6-quart (6 L) slow cooker, combine all ingredients, except seasoning. Mix well.
Step 2
Cover the pot and cook on low-heat setting for 6-8 hours or until beef and vegetables are tender.
Step 3
Turn off the slow cooker and open the lid. Remove beef chunks and cut meat from bones. Return the meat to the soup.
Step 4
Discard the bay leaf. Season to taste with salt and black pepper. Ladle the soup into soup bowls. Serve hot.
