Slow Cooker Roasted Red Pepper, Corn, and Black Bean Soup Recipe
This is hearty and colorful soup. Very delicious!
Makes 4 servings
Ingredients: 4 cups (1L) low-sodium fat-free chicken broth, 15 oz (450 ml) can black beans, rinsed and drained, 12 oz (360 ml) jar roasted red peppers, drained and diced, 1 cup whole kernel corn, 2 cups chopped yellow onions, 3/4 teaspoon dried thyme leaves, 1/8 teaspoon crushed red pepper flakes, 1/8 teaspoon ground allspice, 1/2 cup diced lean ham, 2/3 cup uncooked converted long-grain rice, salt and freshly ground black pepper
Instructions: In a 6 quart (6 L) slow cooker, combine all ingredients, except rice, and seasoning. Cover and cook on high-heat setting for 4-6 hours, adding uncooked long-grain rice during last 2 hours. Turn off the slow cooker. Season black bean soup with salt and black pepper. Serve it hot in soup bowls.
Slow Cooker Sausage and Black Bean Soup Recipe
Black bean soup with vegetables and smoked turkey sausage cooked in a slow cooker.
Makes 6 servings
Ingredients: 2½ quarts (2½ L) chicken stock, 1 pound (480 g) dried black beans, 8 oz (240 g) smoked turkey sausage, sliced, 1 cup sliced carrots, 1 cup chopped yellow onion, 1/2 cup chopped fresh celery, 2 tablespoons Worcestershire sauce, 2 teaspoons dried marjoram leaves, 1 bay leaf, salt and freshly ground black pepper, lemon wedges
Instructions: In a 6 quart (6 L) slow cooker, combine all ingredients, except seasoning and lemon wedges. Cover and cook on low-heat setting for 7-8 hours or until beans are tender. Turn off slow cooker and discard bay leaf. Season to taste with salt and black pepper. Stir well. Ladle soup into soup bowls. Serve with lemon wedges.
Variation:
Slow Cooker Sherried Black Bean Soup Recipe
Instructions: Make recipe as above, substituting crushed cumin seeds for the marjoram. Add 1 teaspoon dried oregano leaves and 1-2 teaspoons light brown sugar. Season to taste with 1-2 tablespoons dry sherry. Serve hot.

- 3 cans (14½ oz (435 ml) each)) reduced-sodium chicken broth
- 1 can (15 oz (450 ml) black beans, rinsed and drained
- 1 medium yellow onion, peeled and chopped
- 3 cloves garlic, peeled and minced
- 2 carrots, peeled and sliced
- 2 ribs celery, sliced
- 2 cups cubed lean smoked ham
- 1 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper flakes
- 1/3 cup uncooked coverted long-grain rice
- 1/3 cup chopped fresh cilantro
- salt and freshly ground black pepper
Method
Step 1
In a 6 quart (6L) slow cooker, combine all ingredients, except uncooked rice, cilantro, and seasoning.
Step 2
Cover and cook on a low-heat setting for 6-8 hours, adding uncooked rice during the last 2 hours.
Step 3
Turn off the slow cooker. Stir in chopped fresh cilantro. Season to taste with salt and black pepper.
Step 4
Ladle black bean soup into soup bowls. Serve hot.
