Ingredients

  • 1 tablespoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cloves
  • 3 pounds (1.44 kg) beef chuck roats, trimmed
  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 1 cup (250 ml) dry red wine
  • 5 medium carrots, peeled and sliced
  • 2 medium turnips, peeled and cut
  • chopped fresh basil, for garnish

Method

Step 1

In a small mixing bowl, combine salt, ground cinnamon, allspice, black pepper, and cloves. Mix well and rub the dry mixture all over the beef.

Step 2

In a large nonstick skillet, heat the olive oil over medium heat. Add seasoned meat and cook until browned, for 4-5 minutes per side. Remove browned beef from the skillet and transfer it to a 6-quart (6 L) slow cooker.

Step 3

Add onions and garlic to the skillet. Cook, stirring, for 2 minutes. Pour in the dry red wine. Bring to a boil, scraping any browned bits from the bottom of the skillet. Remove the mixture from the pan and add it to the slow cooker along with carrots and turnips.

Step 4

Cover the pot and cook on a low-heat setting for 8 hours.

Step 5

Turn off the cooker and open the lid. Remove cooked beef from the slow cooker and transfer it to a cutting board. Slice it and serve with sauce and vegetables over the mashed potatoes.
