  • 1 cup (250 ml) dry red wine
  • 2 tablespoons olive oil

  • 4 lamb shanks, fat trimmed
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a 6-quart (6 L) slow cooker, combine the onion, celery, carrots, garlic, chicken stock, thyme, and bay leaf. Stir well to combine.

Season the lamb with salt and black pepper. Heat the olive oil in a large saute pan over medium-high heat. Add the lamb and brown on all sides, for about 5 minutes. Remove browned meat from the pan and transfer it to the slow cooker.
