Gumbo is a hearty dish that originated from the French Quarter of Louisiana. The dish is usually made of tomatoes, okra, and chicken.

Some variants of gumbo do not contain chicken but are instead served with rice as a primary side dish. Gumbo can be made as a soup or more like a stew. If you’re looking for an easy and flavorful dinner recipe, this slow cooker chicken gumbo is perfect for you!

When I stumbled on this recipe, I knew I had to share it with all of you! It’s an easy dish to prepare that is made from scratch and tastes just as good as what you’d get at a restaurant but for a fraction of the price.

What spices are used to make a Cajun Gumbo?

When you think of the word “gumbo”, there are a lot of interpretations. The first thing that comes to mind for many people is the Cajun dish that is made with chicken and vegetables.

Cajun Gumbo is a soup-like dish that is made with crushed red pepper, onion, and garlic. It also includes okra, tomatoes, and thyme.

The ingredients are boiled together until thickened and then simmered for hours. The gumbo is served over rice or pasta.

Ingredients

  • 1 pound (480 g) boneless and skinless chicken breasts, cubed
  • 14½ oz (435 ml) can stewed tomatoes
  • 2 cups (500 ml) low-sodium fat-free chicken broth
  • 1 cup chopped yellow onion
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, peeled and minced
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon crushed red pepper
  • 8 oz (240 g) small okra, halved
  • 3 cups cooked rice, warm
  • salt and freshly ground black pepper

Method

Step 1

In a slow cooker, combine all ingredients, except okra, rice, and seasoning. Mix well.

Step 2

Cover slow cooker and cook on low-heat setting for 6-8 hours. Add okra during the last 30 minutes.

Step 3

Turn off slow cooker. Season to taste with salt and black pepper.

Step 4

Serve chicken gumbo over the cooked rice.
