Pressure Cooker Chocolate Lava Cake Recipe

This is a mouthwatering lava cake with peanut butter and chocolate cooked in an electric pressure cooker.

Makes 4-6 servings

Ingredients: 6 oz (180 g) semisweet chocolate chips, coarsely chopped, 1/2 cup (125 ml) salted butter, 1/4 cup (60 ml) all-purpose flour, 1/2 cup (125 ml) caster (superfine) sugar, 1/8 teaspoon salt, 1/2 teaspoon (3 ml) instant coffee, 3 large eggs, beaten, 1 large egg yolk, 4 teaspoons (20 ml) creamy peanut butter, 4 โ€“ 6oz (120-180 g) Pyrex dishes

Instructions: Lightly grease each ramekin with nonstick cooking spray. Place salted butter into a medium heat-proof bowl and top with chopped chocolate chips. Microwave on high in 10-second increments, stirring until completely smooth. Remove the butter-chocolate mixture from the microwave and set aside.

In a small mixing bowl, combine all-purpose flour, confectioners sugar, instant coffee, and salt. Stir well.

Using another small bowl, combine beaten eggs and egg yolk. Whisk well. Pour the flour mixture and eggs into the bowl of chocolate, then slowly whisk together, making sure to get out any lumps.

Partially fill the bowls (up 75% of the way), then add 1 teaspoon (5 ml) peanut butter in the center, then top with more creamy batter.

Add 2 cups (500 ml) of warm water into the pot, then place down your trivet. Add bowls with the batter onto the trivet. Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook.

Open the pressure cooker, using the Quick Release method. Allow the cake to cool for a few minutes. Using tongs, remove the dessert from the pressure cooker and transfer it to a serving plate.

Add your favorite toppings and enjoy!

  • 2 cups (500 ml) brown suagr
  • 2 cups (500 ml) all-purpose flour
  • 3 oz (90 ml) unsweetened cocoa powder
  • 2/3 oz (20 ml) baking powder
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Topping:
  • 1ยฝ cups brown sugar
  • 1/2 cup unsweetened cocoa powde
  • 3 cups (750 ml) boiling water

Method

Step 1

In a large mixing bowl, combine brown sugar, flour, cocoa, baking powder, and salt. Mix well.

Step 2

Pour in the milk, then add melted butter and vanilla. Stir until well combined.

Step 3

Spread the batter over the bottom of the greased slow cooker.

Step 4

In a small mixing bowl, combine the brown sugar and cocoa. Mix, then sprinkle over the cake batter. Pour the boiling water over the top (do not stir!)

Step 5

Cover the slow cooker and cook on a high-heat setting for 2-2 1/2 hours or until the toothpick inserted in the center of the cake comes out clean.

Step 6

Turn off the slow cooker and open the lid. Remove cooked chocolate lava cake from the pot and set it aside, allowing it to cool.
