Slow cooker Creole-style shrimp sausage gumbo recipe. Shrimp with sausages and vegetables cooked in a slow cooker. Very easy and tasty. Okra thickens this shrimp recipe giving it a characteristic Creole flavor.

Creole-Style Shrimp and Sausage Gumbo Recipe
Makes 4 servings
Ingredients: 2 tablespoons (30 ml) vegetable oil, 1 red bell pepper, cored, seeded, and cut into pieces, 1 medium yellow onion, peeled and coarsely chopped, 1 celery rib, washed and cut into 1/2 inch (1.25 cm) pieces, 2 garlic cloves, peeled and finely chopped, 1/4 teaspoon cayenne pepper, salt, and freshly ground black pepper, to taste, 1/2 pound (240 g) andouille sausage or spicy kielbasa, halved lengthwise and sliced crosswise into 1/2 inch (1.25 cm) thick, 1 oz (30 ml) all-purpose flour, 4 cups (1 L) chicken stock, 2 fresh thyme sprigs, 3/4 pound (360 g) medium raw shrimp, peeled and deveined, 1 scallion, thinly sliced (green and white parts), 1 tablespoon (15 ml) finely chopped fresh flat-leaf parsley
Instructions on how to make shrimp and sausage gumbo: In a large saucepan, heat vegetable oil over medium heat. Add the red bell pepper, chopped yellow onion, garlic, and celery. Season vegetables with salt, cayenne, and black peppers. Cook, stirring occasionally until vegetables are softened, for about 2 minutes.
Add the sausages and cook, stirring occasionally, until lightly browned, for a further 5 minutes. Sprinkle sausage mixture with all-purpose flour and stir until evenly coated. Pour in the chicken stock, then add thyme sprigs. Reduce heat to low and simmer for 10 minutes.
Add shrimp and scallion to the saucepan, then season lightly with salt, increase heat to medium, and simmer, stirring, until shrimp are opaque and cooked through, for about 2 minutes.
Discard thyme sprigs. Stir in chopped fresh parsley. Serve over the cooked rice.

Ingredients
- 2 cans (14 oz (420 ml) each) stewed tomatoes
- 1/4 pound (120 g) reduced-fat smoked sausage, sliced
- 1 red bell pepper, chopped
- 1 clove garlic, peeled and minced
- 1/8 teaspoon crushed red pepper
- 1/2 pound (240 g) fresh sliced okra
- 3/4 pound medium shrimp, peeled and deveined
- salt, to taste
- 3 cups (750 ml) cooked rice, warm
Method
Step 1
In a 6-quart (6 l) slow cooker, combine all ingredients, except okra, shrimp, salt, and rice. Mix well.
Step 2
Close the cooker and cook on a low-heat setting for 6-7 hours, adding okra during the last 30 minutes and shrimp during the last 10 minutes.
Step 3
Turn off the slow cooker. Serve shrimp and sausage mixture with salt. Serve over the cooked warm rice
