Slow cooker curry meatball soup recipe. Beef stock-based soup with vegetables, curry powder, and curry meatballs cooked in a 6-quart (6 l) slow cooker.

To make a delicious and flavorful slow cooker curry meatball soup, you’ll need a few simple ingredients. Start by preparing a beef stock-based soup in your 6-quart slow cooker. This will serve as the base for the soup and provide a rich and savory flavor.

How to Make Curry Meatball Soup in a Slow Cooker

Next, add in some diced yellow onion, carrots, and garlic to the slow cooker. These vegetables will not only add a depth of flavor but also provide some added nutrition to the soup.

To give the soup its signature curry flavor, sprinkle in some curry powder. The aromatic spices in the curry powder will infuse the soup with a warm and fragrant taste.

Now it’s time to add in the star of the show – the curry meatballs. These meatballs are made with ground beef and seasoned with curry powder, creating a harmonious blend of flavors.

Let the soup simmer in the slow cooker for a few hours, allowing all the flavors to meld together and the meatballs to cook through.

Finally, before serving, add in some cooked Ditalini pasta to make the soup heartier and more satisfying. The small tube-shaped pasta will soak up the flavors of the soup and provide a comforting texture.

Serve the slow cooker curry meatball soup hot and garnish with some fresh cilantro or a squeeze of lime juice for an extra burst of freshness. This soup is perfect for a cozy night in or for feeding a crowd. Enjoy the comforting flavors of this easy and delicious curry meatball soup.

Meatball Curry Soup Serving Suggestions

Meatball curry soup is a hearty and flavorful dish that can be enjoyed on its own or paired with some delicious accompaniments. Here are a few serving suggestions to enhance your dining experience:

1. Naan Bread: Serve the meatball curry soup with warm and fluffy naan bread. The soft and chewy texture of the bread pairs perfectly with the rich and aromatic flavors of the soup. Tear off a piece of naan and dip it into the soup for a satisfying bite.

2. Basmati Rice: For a more substantial meal, serve the meatball curry soup over a bed of fluffy basmati rice. The fragrant rice will soak up the flavorful broth, adding an extra layer of texture and taste to each spoonful.

3. Raita: Cool down the heat of the curry with a refreshing side of raita. This yogurt-based condiment is made with cucumber, mint, and a hint of spices. The creamy and tangy raita complements the spiciness of the soup and adds a cooling element to the meal.

4. Fresh Herbs: Garnish the meatball curry soup with a handful of fresh herbs like cilantro or mint. The vibrant green herbs not only add a pop of color to the dish but also provide a burst of freshness that balances out the richness of the soup.

5. Lime Wedges: Squeeze some fresh lime juice over the soup just before serving. The tangy citrus flavor cuts through the richness of the curry and adds a bright and zesty note to each spoonful.

These serving suggestions will elevate your meatball curry soup and take it to the next level. Experiment with different combinations to find your favorite way to enjoy this comforting and delicious dish.

How to Store Curry Meatball Soup Leftovers

To ensure that you can enjoy your curry meatball soup for another day, it’s important to store the leftovers properly. Here are some tips on how to store curry meatball soup leftovers:

1. Refrigerate: Allow the soup to cool down to room temperature before transferring it to an airtight container. Place the container in the refrigerator and make sure it is tightly sealed. The soup can be stored in the refrigerator for up to 3-4 days.

2. Freezing: If you want to store the curry meatball soup for a longer period, you can freeze it. Transfer the cooled soup into freezer-safe containers or resealable freezer bags. Leave some space at the top of the container or bag to allow for expansion during freezing. Label the containers with the date and contents. The soup can be frozen for up to 3 months.

3. Thawing and Reheating: When you’re ready to enjoy the frozen curry meatball soup, thaw it overnight in the refrigerator. Once thawed, transfer the soup to a saucepan and heat it gently over medium-low heat until it is heated through. Stir occasionally to ensure even heating. Alternatively, you can thaw the soup in the microwave using the defrost setting, stirring occasionally.

By following these storage tips, you can enjoy your curry meatball soup leftovers without compromising on taste or quality. Whether you choose to refrigerate or freeze the soup, you’ll have a delicious meal ready to enjoy whenever you’re in the mood for some comforting and flavorful soup.
