Pressure Cooker Easy Beef Bean Chili Recipe

This classic chili recipe is loaded with ground beef, vegetables, and red kidney beans.

Makes 5 servings

Ingredients: 1 tablespoon (15 ml) vegetable oil, plus extra if needed, 2½ pounds (1.44 kg) ground lean beef, 1 medium yellow onion, peeled and diced, kosher salt and freshly ground black pepper to taste, 3 medium cloves garlic, peeled and minced, 2 teaspoons (10 ml) chili powder, 1/2 teaspoon (3 ml) each: onion powder, garlic powder, and ground cumin, 1/4 teaspoon (1.2 ml) cayenne pepper, 1 tablespoon (15 ml) tomato paste, 28 oz (840 ml) can peeled tomatoes, crushed, drained, and juice reserved, 1/4 cup (60 ml) strongly brewed coffee, 1/2 oz (15 g) dark chocolate, 1/2 teaspoon (3 ml) fish sauce, 1 bay leaf, 4 cups (1 L) cooked red kidney beans, drained, sour cream, fresh cilantro leaves, thinly sliced jalapeño pepper, grated cheese, and lime wedges- for serving

How to prepare easy beef bean chili recipe: Heat the vegetable oil in an electric pressure cooker turned to the sauté mode. Add 1/4 of ground beef and cook, stirring occasionally, until nicely browned. Using a slotted spoon, remove cooked meat from the pot and set it aside. Drain, leaving 1 tablespoon (15 ml) of fat in the cooker.

Add diced yellow onion and cook, stirring occasionally and scraping up any browned bits from the bottom of the pot, until the onion is lightly golden. Sprinkle with kosher salt, then stir in minced garlic and the remaining spices. Cook, stirring, until fragrant, for a further 1 minute.

Add the tomato paste and continue cooking and stirring for 1 minute more.

Return browned beef with any accumulated juices to the pot, then add uncooked beef and crushed tomatoes. Stir well. Season with salt. Stir in coffee, dark chocolate, and Asian fish sauce. Add bay leaf and bring the meaty mixture to a simmer, stirring and scraping the bottom of the pot.

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 20 minutes.

Carefully open the pot. Discard the bay leaf. Stir in drained kidney beans, then season with salt, black, and cayenne peppers. Simmer beef bean chili, stirring occasionally, for about 5 minutes.

  • 2 ounds (960 g) lean ground beef
  • 1 large yellow onion, peeled and chopped
  • 4 garlic cloves, peeled and minced
  • 28 oz (840 ml) can crushed tomatoes, undrained
  • 1/2 cup (125 ml) water
  • 2 teaspoons dried oregano
  • 1½ tablespoons chili powder
  • 1½ tablespoons ground cumin
  • 2 teaspoons cocoa powder
  • 2 teaspoons chipotle chili powder
  • 15 oz (450 ml) can black beans, drained and rinsed
  • 1 can kernel corn, drained
  • For Serving:
  • 2 teaspoons chipotle chili powder
  • shredded Cheddar cheese
  • sour cream
  • chopped green onions
  • tortilla chips

Method

Step 1

In a large nonstick skillet, heat the olive oil over medium-high heat. Add ground beef and onion. Cook, stirring occasionally until meat is browned and no longer pink.

Step 2

Remove cooked meat and onion from the skillet and transfer to a 6-quart (6 L) slow cooker. Add remaining ingredients, except beans and corn. Stir well.

Step 3

Cover the pot and cook in a low-heat setting for 4-5 hours, adding drained beans and corn during the last 30 minutes.

Step 4

Turn off the slow cooker. Season beef bean chili with salt and black pepper. Transfer to serving plates. Serve with your favorite toppings.
