Slow Cooker Kale and Ravioli Soup Recipe
This is chicken broth based vegetable soup recipe. Fresh ravioli or tortellini can be prepared in the slow cooker or cooked in advance and added to the cooker at the end of cooking time.
Makes 6 servings
Ingredients: 1 quart (1 L, 4 cups) reduced-sodium fat-free chicken broth, 2 cups (500 ml) water, 1 cup (250 ml) sliced carrots, 1 cup (250 ml) chopped plum tomatoes, 1 cup (250 ml) chopped yellow onion, 1 cup (250 ml) chopped celery, 2 cloves garlic, peeled and minced, 3/4 teaspoon dried basil, 3/4 teaspoon dried rosemary leaves, 1/2 package (9 oz-size (270 g)) fresh herb ravioli, 3 cups (750 ml) coarsely chopped kale, 2-3 teaspoons freshly squeezed lemon juice, salt and freshly ground black pepper, to taste
Instructions: In 6-quart (6 L) slow cooker, combine all ingredients, except herb ravioli, kale, lemon juice, and seasoning. Cover the cooker and cook on high-heat setting for 3-4 hours. Open the lid and add ravioli and kale. Cook, uncovered, until ravioli float to the top, for a further 10-15 minutes.
Turn slow cooker off. Season kale and ravioli soup with salt and black pepper. Stir well. Ladle into soup bowls. Serve hot.

Ingredients
- 1¼ quarts (1250 ml) beef stock
- Curry Meatballs (recipe follows)
- 1/2 cup (125 ml) chopped yellow onion
- 4 medium carrots, peeled and diced
- 2 teaspoons minced garlic
- 2 teaspoons curry powder
- 1/2 pound (240 g) Ditalini pasta
- salt and freshly ground black pepper, to taste
- Curry Meatballs:
- 1/2 pound (240 g) lean ground beef
- 1/3 cup minced yellow onion
- 1½ teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Method
Step 1
In 6-quart (6 L) slow cooker, combine all ingredients, except pasta and seasoning. Cover the cooker and cook on high-heat setting for 4-5 hours, adding pasta during the last 15 minutes.
Step 2
Turn slow cooker off and pen the lid. Season curry soup with salt and black pepper. Stir well.
Step 3
Ladle soup into soup bowls. Serve hot.
Step 4
To Make Curry Meatballs: Combine all ingredients. Mix well. Shape into 12-16 meatballs.
