Ingredients
- 3½ pounds (1.7 kg) beef chuck, cubed
- 2 tablespoons canola oil
- 2 yellow onions, peeled and finely diced
- 1 tablespoon tomato paste
- 4 cloves garlic, peeled and minced
- 1/4 cup all-purpose (plain) flour
- 3 cups (750 ml) beef broth
- 1¼ cups (300 ml) Guiness beer, divided
- 1½ tablespoons brown sugar
- 1 tablespoon fresh thyme
- 1 pound (480 g) carrots, peeled and chunked
- fresh parsley
- salt and freshly ground black pepper, to taste
Method
Step 1
To prepare the beef, season with salt and black pepper and completely cover it with a layer of flour. Make sure to use all the flour for maximum flavor.
Step 2
Put 1 tablespoon of oil in a Dutch oven over medium-high heat and let it heat up. Working in batches, brown the beef on all sides, then remove browned meat from the oven and transfer it to a slow cooker.
