  • 1 pound (480 g) diced lamb
  • 2 cloves garlic, peeled and minced
  • 2 large potatoes, peeled and diced
  • 4 medium carrots, peeled and diced
  • half of medium yellow onion, peeled and diced
  • 1 cup pearl barley
  • 8 cups (2 L) beef broth
  • 1/2 cup dried peas
  • 1 stal celery, chopped
  • 2 teaspoons dried parsley
  • 1/2 teaspoon celery seeds
  • water
  • 1 tablspoon extra-virgin olive oil
  • 3/4 teaspoon ground white pepper
  • 1/4 teaspoon ground allspice

Method

Step 1

Pour 1/2 inch (1.25 cm) of water into a 6-quart (6 L) slow cooker. Turn the cooker to high.

Step 2

Put diced potatoes in the boiling water first. Pre-heating the crock with boiling water can accelerate the process of cooking potatoes by approximately one hour. Stir in the carrots, onion, peas, celery, and pearl barley, then pour in the beef stock and add dry spices.
