Sweet potatoes are a healthy food that provides many benefits. They are rich in vitamins, minerals, and antioxidants. The natural sugars in them can help lower blood sugar levels and they are a good source of fiber. Sweet potatoes also have a low glycemic index, which means they won’t spike your blood sugar levels as white potatoes do.

Baked Sweet Potato Toppings:

Broccoli&Cheese

To make a delicious and healthy vegetable side, you can sauté or steam some broccoli and mix it with shredded cheese before broiling, or just reheat it in the microwave.

Your Favorite Greek-ish salad:

Top a cut potato with feta cheese, olives, chopped onion, and a drizzle of dressing (herb to taste). Easy peasy!

Method

Step 1

Wash and dry the potatoes. Wrap each sweet potato in aluminum foil and place them in a 6-quart (6 L) slow ocoker.

Step 2

Cover the pot and cook on a high-heat setting for 5 hours.

Step 3

Meanwhile, prepare the Yogurt sauce: In a small mixing bowl, combine all sauce ingredients, except green onions. Mix well. Sprinkle with chopped green onions.

Step 4

Turn off the slow cooker and open the lid. Remove baked sweet potatoes from the cooker and transfer them to a large plate. Top each baked potato with homemade Yogurt sauce. Serve hot.
