Slow Cooker Merlo Chicken with Mushrooms Recipe

Ingredients

  • 2-3 pounds (960-1.44 kg) boneless and skinless chicken breasts
  • 3 cups sliced mushrooms
  • 1 large yellow onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 3/4 cup (180 ml) chicken broth
  • 6 oz (180 ml) can tomato paste
  • 1/4 cup (60 ml) dried red wine (Merlot)
  • 2 tablespoons quick-cooking tapioca
  • 2 tablespoons dried basil
  • 2 tablespoons white sugar
  • 1/4 tablespoon salt
  • 1/4 tablespoon freshly ground black pepper
  • 2 tablespoons shredded Parmesan (optional)

Method

Step 1

In a 6-quart (6L) slow cooker, combine mushrooms, onion, and garlic. Mix well. Place chicken on top of vegetables.

Step 2

In a large mixing bowl, combine chicken broth, tomato paste, wine, tapioca, sugar, and seasoning. Stir well, then pour the mixture over chicken and vegetables.

Step 3

Cover the pot and cook on low-heat setting for 6-8 hours or until chicken and vegetables are tender.

Step 4

Turn off the cooker and open the lid. Stir the chicken mixture well. Transfer to serving plates. Sprinkle with shredded parmesan (optional). Serve immediately.
