Ingredients

  • 16 oz (480 g) frozen mixed berries
  • 3/4 cup granulated sugar
  • 2 tablespoons quick-cooking tapioca
  • 2 teaspoons grated lemon peel
  • 1½ cups all-purpose flour
  • 1/2 cup light brown sugar
  • 2¼ teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup (180 ml) milk
  • 1/2 cup butter, melted
  • vanilla ice cream

Method

Step 1

Lightly grease the 4½-quart slow cooker with nonstick cooking spray. In a medium mixing bowl, combine berries, granulated sugar, tapioca, and lemon peel. Stir well. Transfer mixture to slow cooker.

Step 2

For Topping: In a medium mixing bowl, combine flour, brown sugar, baking powder, and nutmeg. Add milk and butter and stir until blended.

Step 3

Drop spoonfuls of dough on top of the berry mixture. Cover the slow cooker and cook on a low-heat setting for 4 hours. Uncover; set aside and allow it to cool (about 30 minutes). Serve the slow cooker mixed berry cobbler with vanilla ice cream.
