Ingredients

  • 1 pound (480 g) chorizo sausages, cut into pieces
  • 3½ oz (100 g) pork lardons
  • 1 pound (480 g) cannellini beans, tinned
  • 1 white onion, peeled and diced
  • 2 carrots, peeled and diced
  • 4 garlic cloves, peeled and minced
  • 14 oz (420 g) chopped tomatoes
  • 1 cup (250 ml) dry white wine
  • 1/2 cup (125 ml) water
  • 1 chicken stock cube
  • 4 tablespoons tomato puree
  • 2 teaspoons chopped fresh parsley
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 teaspoons paprika
  • 1½ teaspoons sugar
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon cooking oil

Method

Step 1

Heat the oil in a large frying pan over medium heat. Add sausages and cook until lightly browned, for about 1-2 minutes. Add pork lardon and cook continue cooking until the sausages are golden brown.

Step 2

In a slow cooker, combine carrots, garlic, thyme, parsley, fried sausages, and lardon. Mix well.

Step 3

Using the same pan, drain away any excess fat and return the pan to heat. Pour in the wine and simmer for 2-3 minutes over medium-high heat, to evaporate the alcohol.

Step 4

Pour the reduced wine and chicken stock cube ( dissolved in hot water) into the slow cooker. Add the remaining ingredients and stir well.

Step 5

Cover the pot and cook on a low-heat setting for 6-8 hours.
