Cheddar Cheese Sauce for Scalloped Potatoes

makes about 2 cups (500 ml)

Ingredients: 2 tablespoons (30 ml) unsalted butter, 3 tablespoons (45 ml) finely chopped yellow onion, 3 tablespoons (45 ml) all-purpose flour, 1½ cups (365 ml) 2% reduced-fat milk, 2 oz (60 ml) processed cheese, cut into cubes, 3 oz (300 ml) shredded Cheddar cheese, 1/2 teaspoon (3 ml) dry mustard, salt and freshly ground black pepper, to taste

Instructions: In a small saucepan, melt the butter over medium-high heat. Add onion, and all-purpose flour. Cook, stirring occasionally, for 1-2 minutes, then whisk in milk. Increase heat to high and bring the mixture to a boil. Boil for 2-3 minutes, stirring until thickened. Reduce heat to low, then add cheese and dry mustard. Stir until melted. Season to taste with salt and black pepper and stir well.

Ingredients

  • 2 pounds (960 g) Idaho potatoes, peeled and sliced
  • 1/4 cup thinly sliced yellow onoions
  • 4 slices bacon, cubed
  • Cheddar Cheese sauce (see recipe above)

Method

Step 1

In a small nonstick skillet, cook the bacon over medium-high heat until crisp. Remove cooked bacon from the skillet and set aside.

Step 2

Layer half potatoes, bacon, and onion in a 4-6-quart (4-6 l) slow cooker. Sprinkle with salt and black pepper, then pour half of the cheese sauce over. Repeat layers.

Step 3

Cover the pot and cook on high-heat setting until potatoes are tender, for about 3½ hours.

Step 4

Turn off the slow cooker and open the lid. Remove cooked scalloped potatoes from the pot and transfer them to a serving plate. Serve hot.
