Cheddar Cheese Sauce for Scalloped Potatoes

makes about 2 cups (500 ml)


Ingredients: 2 tablespoons (30 ml) unsalted butter, 3 tablespoons (45 ml) finely chopped yellow onion, 3 tablespoons (45 ml) all-purpose flour, 1½ cups (365 ml) 2% reduced-fat milk, 2 oz (60 ml) processed cheese, cut into cubes, 3 oz 9300 ml) shredded Cheddar cheese, 1/2 teaspoon (3 ml) dry mustard, salt and freshly ground black pepper, to taste

Instructions: In a small saucepan, melt the butter over medium-high heat. Add onion, all-purpose flour. Cook, stirring occasionally, for 1-2 minutes, then whisk in milk. Increase heat to high and bring the mixture into a boil. Boil for 2-3 minutes, stirring until thickened. reduce heat to low, then add cheeses and dry mustard. Stir until melted. season to taste with salt and black pepper and stir well.

Slow Cooker Scalloped Potatoes Recipe

Ingredients

  • 2 pounds (960 g) Idaho potatoes, peeled and sliced
  • 1/4 cup thinly sliced yellow onoions
  • 4 slices bacon, cubed
  • Cheddar Cheese sauce (see recipe above)

Method

Step 1

In a small nonstick skillet, cook the bacon over medium-high heat until crisp. Remove cooked bacon from the skillet and set aside.

Step 2

Layer half potatoes, bacon, and onion in a 4-6-quart (4-6 l) slow cooker. Sprinkle with salt and black pepper, then pour half of cheese sauce over. Repeat layers.

Step 3

Cover the pot and cook on high-heat setting until potatoes are tender, for about 3½ hours.

Step 4

Turn off the slow cooker and open the lid. Remove cooked scalloped poattoes from the pot and transfer to a serving plate. Serve hot.
