Slow cooker tomato and rice soup recipe. Delicious vegetable soup cooked in a slow cooker. Use a vegetable broth to make it vegetarian-friendly. You may also like Pasta with Sun-Dried Tomato Sauce, another tasty and easy vegetarian recipe cooked in a crock pot/slow cooker.

I used a low-sodium chicken broth in this recipe. As I mentioned above, use a vegetable broth to make it vegetarian-friendly.

Slow Cooker Tomato and Rice Soup Recipe

Ingredients

  • 1 cup chopped yellow onions
  • 1 cup shredded carrots
  • 1 cup dried lentils
  • 14½ oz (435 ml) can Italian-style stewed tomatoes
  • 6 oz (180 ml) can Italian-style paste
  • 14 oz (420 ml) can peas, drained
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon dried thyme crushed
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups (750 ml) water
  • 14 oz (420 ml) can low-sodium chicken broth
  • 1 cup quick-cooking rice

Method

Step 1

In a 4-quart (4 L) slow cooker, combine onions, carrots, celery, undrained tomatoes, tomato paste, oregano, thyme, and black pepper. Mix well, then stir in water and broth.

Step 2

Cover the pot and cook on low-heat setting for 8-10 hours, adding drained peas and lentils during last hour.

Step 3

Turn off crock pot and open the lid. Stir in quick-cooking rice. Cover and let stand 7-10 minutes or until rice is tender.

Step 4

Ladle soup into soup bowls. Serve hot.
