Ingredients

  • 1/4cup mascarpone cheese, at room temperature
  • 1/4 teaspoon pur vanilla extract
  • 1 cup powdered sugar
  • 12 large strawberries
  • 24 mini chocolate chips

Method

Step 1

To make the frosting: In a mixing bowl, combine mascarpone cheese and vanilla extract. Using an electric hand mixer, beat until smooth. Mix in the powdered sugar until it forms a thick, smooth mixture. Use a spatula to transfer the frosting to a piping bag fitted with a small star piping tip.

Step 2

To make Santas: Use a paring knife to make a flat surface on the bottom of each strawberry. Cut 1/2 – 3/4 inch (1.25-1.50 cm) piece from the pointed end of each strawberry and use it as a hat.

Step 3

Arrange the strawberries on a surface so that the wider sides are turned downward. Pipe a dab of frosting on top of each strawberry. Top the hats and pipe a small ball of frosting on top. Press two chocolate chips, with the pointed side inwards, into the swirl of frosting to make eyes.
