Ingredients
- 1 pound (480 g) boneless and skinless chicken breasts
- 2 teaspoons olive oil
- salt, to taste
- 1/2 cup panko breadcrumbs
- 2 teaspoons seasoning salt
- 2 teaspoons paprika
- 2 teaspoons ground mustard
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
Method
Step 1
Preheat your air fryer to 400 F (200 C) for 5 minutes.
Step 2
Place the chicken between 2 layers of parchment paper. Using a rolling pin, roll the chicken. Pat dry with paper towels.
Step 3
Pour the olive oil over the chicken (together with parchment). Sprinkle with a pinch of salt.
Step 4
In a small mixing bowl, combine the remaining ingredients. Mix well.
Step 5
Dip each chicken breast in panko mixture, then place in the air fryer basket. Cover breaded chicken with cooking spray.
Step 6
Cook at 400 F (200 C) for 8 minutes. Flip and cook for a further 8 minutes.
