Ingredients

  • 1Β½ cups shredded chicken, cooked
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1/2 cup (125 ml) salsa
  • 4 oz (120 g) cream cheese, at room temperature
  • 2 cloves garlic, peeled and minced
  • 2 refrigerated pie crust
  • all-purpose flour
  • 1 large egg, beaten
  • 1/2 teaspoon chili powder

Method

Step 1

In a large mixing bowl, combine the shredded chicken, cumin, onion powder, and salt. Stir well, then add shredded Cheddar cheese, salsa, cream cheese, and minced garlic. Mix until well combined.

Step 2

Dust your work surface with a flour and roll out the pie crusts to 12 inches (25 cm) circle. Using a 4-inch (10 cm) cookie cutter, cut each crust. Spoon the chicken stuffing evenly into the center of the dough. Fold the dough over, then, using a fork, crimp the edges. Brush with beaten egg and sprinkle with chili powder.

Step 3

Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place chicken empanadas in a single layer in the air fryer basket. Fry at 350 F (175 C) for 7 minutes, or until crust is golden brown.
