Ingredients

  • 1/2 cup softened unsalted butter
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, peeled and crushed
  • 1¹⁄³ pounds (600 g) ground chicken
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Method

Step 1

In a medium mixing bowl, combine butter, parsley, and garlic. Mix until evenly combined, then divide the mixture into 12 equal parts. Transfer them to a baking sheet. Cover with plastic wrap and freeze for about 20 minutes.

Step 2

Shape the ground chicken to make 12 balls. Make a thumbprint in the middle of each ball. Put a piece of frozen butter mixture in the indention, then wrap the meat around the butter. Repeat with remaining balls.

Step 3

Place beaten eggs in a shallow bowl. In a separate bowl, combine breadcrumbs, paprika, salt, and black pepper. Stir well.

Step 4

Dip chicken balls in the beaten eggs, then in seasoned breadcrumbs. Dip each ball in the egg again and in the seasoned breadcrumb mixture one more. Transfer balls to a baking sheet and freeze for 10 minutes.

Step 5

Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place balls in the air fryer and spray with nonstick cooking spray. Fry at 400 F 9200 C) for 10 minutes, flipping halfway through and spraying with more cooking spray. Repeat with remaining balls. Serve hot.
