They’re both ready in 30 minutes from start to finish, so whip up a batch today!
That’s all I could say after taking a bite out of the chicken, “lollipop” with crispy skin and contrastingly flavorful sauce. The flavor set off waves of delight and was really easy to make. If you don’t have an air fryer, no worries! I’ve found that popping these in the oven is just as effective and you won’t miss out on all that buttery goodness. It is way too addicting!
To Make Honey-Soy Garlic Sauce:
When the last batch of chicken is almost done cooking, it’s good that you’re thinking about how you’ll prepare the sauce. Heat some vegetable or canola oil in a pan over medium heat. Add minced garlic, and fry it until it starts to turn light brown.
To make the sauce, pour in the soy sauce, honey, and rice vinegar. Stir well to combine everything and switch the heat up to medium-high. In another bowl, mix cornstarch and water to create a slurry.
Pour a cornstarch slurry, made by mixing together cornstarch and cold water in a small container, into the honey-soy sauce. Stir the mixture until it thickens.
If you want to serve the sauce with the chicken lollipops, you can either remove it from heat and reserve it for dipping; or add it in with your lollipops for a nice and spicy flavor. To serve, garnish with chopped green onions or chives, and let everyone enjoy the lollipops while they are still warm.

Ingredients
- For the Chicken:
- 10 chicken drumsticks
- 1½ teaspoons kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons vegetable oil
- 1/4 cup cornstarch
- To Make Honey-Soy Garlic Sauce:
- 1 tablespoons vegetable oil
- 2 teaspoons minced garlic
- 1/2 cup (125 ml) soy sauce
- 1/2 cup (125 ml) pure honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- sesame seeds, to serve
- chopped green onions, to serve
Method
Step 1
Using a sharp knife, cut around the thin part of the bone near the gristle/joint. Cut the meat away from the bone on both sides of the backbone by following it with your knife and pushing it down to the bottom. Remove any excess cartilage from the meat before you cut it
Step 2
Cut 3/4 of the way along one side of the meat, starting near the bottom and cutting up. Flip the meat inside out, so that the skin is now on the inside. This should create a lollipop effect. In a large mixing bowl, place chicken lollipops that have been cut off the fibula with kitchen shears.
Step 3
Preheat your air fryer to 400 F (200 C) In a small mixing bowl, combine salt, black pepper, garlic powder, and vegetable oil. Stir well and rub the chicken.
Step 4
Place 1/2 cup in a medium bowl. Roll each chicken drumstick around the starch. Working in batches, place 3-4 chicken lollipops into your air fryer without crowding the basket. Fry at 400 F (200 C) for 10-12 minutes, or until the drumsticks are golden brown. Remove fried chicken from the fryer and transfer them to a cooling rack.
Step 5
To Make the Sauce: In a large nonstick skillet, heat one tablespoon of vegetable oil over medium heat. Add minced garlic and cook, stirring occasionally, until lightly browned. Pour in the soy sauce, honey, and vinegar. Stir well to combine, then switch the heat to medium-high and continue cooking until it starts to bubble.
Step 6
In a small mixing bowl, combine cornstarch and water. Mix until cornstarch dissolved completely. Pour the slurry into the sauce and continue stirring until the sauce is thickened. Remove the sauce from the heat and reserve for dipping. Sprinkle chicken lollipops with sesame seeds and green onions. Serve hot.
