Ingredients

  • 3 boneless and skinless chicken breasts, boiled and shredded
  • 1 can yellow corn, drained
  • 2 jalapenos, seeded and diced
  • 1/2 can diced green chilies
  • 1/4 red onion, peeled and diced
  • 8 oz (240 ml) cream cheese
  • 1/4 cup (60 ml) sour cream
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon freshly ground black pepper
  • 24 corn tortillas

Method

Step 1

In a large mixing bowl, combine drained corn, jalapeños, green chilies, red onion, cumin, chili powder, and black pepper. Stir well, then add shredded chicken and mix to combine.
