  • 2 large eggs, beaten
  • 1 tablespoon grated Parmesan
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup diced fresh tomatoes
  • 1/2 cup diced orange bell pepper
  • 1/4 cup fresh spinach, diced
  • 1/4 cup shredded Cheddar cheese


Step 1

In a medium mixing bowl, combine beaten eggs, grated Parmesan cheese, milk, salt, and black pepper. Beat well.

Step 2

Fold in the spinach, bell peppers, and tomatoes.

Step 3

Pour the mixture into a small air fryer-safe pan, sprayed with olive oil. Fry at 330 F (165 C0 for 7 minutes. When there is a minute left, sprinkle shredded Cheddar cheese on top. Continue frying until the cheese is melted.
