Ingredients

  • 1/2 of 10 oz (300 g) package frozen spinach, thawed and squzeed dry
  • 1 large egg, beaten
  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup crumbled feta cheese
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • freshly ground black pepper, to taste
  • 6 sheets phyllo dough
  • 1/2 cup (125 ml) unsalted butter, melted

Method

Step 1

In a large bowl, combine all ingredients, except dough and butter. Whisk well and set aside.

Step 2

Place a sheet of dough on a clean work surface. Brush with melted butter and top with another layer sheet of phyllo. Brush with butter again, then cut the sheets into 6 3-inch (7.5 cm) wide strips.

Step 3

Top each strip with 1 tablespoon of spinach mixture. Fold the bottom left corner over the mixture towards the right strip edge, to make a triangle. Keep folding triangles until each strip is folded over.

Step 4

Brush triangles with melted butter. Repeat with remaining strips and dough.

Step 5

Place 6 triangles in the air fryer basket. Fry at 350 F (175 C) for 8 minutes or until golden brown, flipping once halfway through.

Step 6

Serve hot.
