Ingredients
- 4 boneless and skinless chicken thighs
- To Make a Sauce:
- 8 oz (240 ml) pineaaple chunks in juice, drained and juice reserved
- 1/4 cup (60ml) soy sauce
- 1/4 cup splenda
- 2 tablespoons ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 cup chopped green scallions
Method
Step 1
Using a fork, poke the hols into the chicken, then place it in a large bowl. Set aside.
Step 2
Make the Sauce; Remove 1/4 cup (60 ml) of liquid from the canned pineapples and reserve it. Set aside drained pineapple chunks.
Step 3
In a small bowl, combine reserved pineapple liquid, soy sauce, sugar, ketchup, ginger, and garlic. Stir well.
Step 4
Pour half of the sauce over the chicken, reserving the rest of the sauce as a dipping sauce. Stir until chicken is well coated with the marinade. Set aside and allow it to marinate for at least 30 minutes.
Step 5
Preheat your air fryer to 400 F (200 C). Remove marinated chicken thighs from the bowl and place them in the air fryer basket. Fry at 360 F (180 C) for 15 minutes, flipping them halfway through.
Step 6
Meanwhile, place the reserved sauce in a microwave and cook for 45 seconds, or until the sauce is thickened, stirring every 15 seconds.
Step 7
Remove fried chicken from the fryer and transfer it to a serving plate. Pour the sauce over the chicken. Sprinkle with chopped green onions. Serve hot.
