Ingredients

  • 1 pound (480 g) shrimp, peeled, deveined, tails intact
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1ΒΌ cups Panko breadcrumbs
  • oil spray

Method

Step 1

Place breadcrumbs in a frying pan and toast them over medium heat until lightly browned, for about 5 minutes. Remove toasted breadcrumbs from the heat and set aside.

Score the shrimp in three places, then uncurl it to lie in a straight line.

Step 3

Bread the shrimp in your egg-flour batter, then dip in toasted panko breadcrumbs. Press them firmly into the shrimp so that they brown evenly on all sides.

Step 5

Preheat an air fryer to 350 F (175 C)
