Ingredients

  • 5 medium potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1/3 cup cooked and crumbled bacon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt

Method

Step 1

Preheat your air fryer to 400 F (200 c) for 5 minutes.

Step 2

In a large bowl, combine potatoes, oil, and seasoning. Toss until potatoes are thoroughly coated.

Step 3

Grease the air fryer basket with nonstick cooking spray. Add cubed potatoes and cook for 15 minutes, shaking the basket twice during the cooking time.

Step 4

Remove fried potatoes from the fryer and transfer them to a large plate. Add crumbled bacon and stir well.

Step 5

Spray the air fryer basket with more cooking spray. Crack the eggs into the air fryer pan. Fry at 370 F (185 C) for 3 minutes.

Step 6

Remove fried eggs from the fryer and transfer them to a plate with fried potatoes. Serve hot.
