Ingredients
- 1 pound (480 g) boneless duck breasts
- kosher salt
- freshly ground black pepper
- freshly squeezed juice and zest of 1 orange
- 1/4 cup (60 ml) honey
- 2 sprigs fresh thyme
Method
Step 1
Pat the duck breasts dry with paper towels. Using a sharp knife, make 3-4 shallow diagonal slashes in the skin. Flip the breasts and score the skin on the diagonal in the opposite direction to create a cross-hatch pattern. Season both sides with salt and black pepper. Set aside.
Step 2
Preheat your air fryer to 400 F (200 C) for 5 minutes.
Step 3
Place seasoned duck skin-side up in the air fryer basket. Fry at 400 F (200 C) for 8 minutes, then turn and fry for a further 4 minutes.
Step 4
Meanwhile, prepare the sauce: In a small saucepan, combine orange juice, zest, honey, and thyme. Mix well and bring to a boil, stirring, over medium-high heat. Reduce heat to low and simmer until sauce is thickened.
Step 5
After duck is cooked on both sides, brush the skin with orange-honey glaze. Fry for 1 more minute, then remove fried duck from the fryer and transfer to a cutting board. Allow to rest.
Step 6
Slice the duck breasts. Serve hot.
