Creamed Rock Lobster Tail in the Half-Shell Recipe

Makes 2 servings

Ingredients: 1 medium-sized rock lobster tail, cooked, 6 tablespoons unsalted butter, 2 scallions, finely chopped, 1/4 cup all-purpose flour, 1/4 cup (60 ml) milk, 1/2 cup (125 ml) milk, 1/4 cup (60 ml) sherry, salt and freshly ground black pepper, 1/4 cup fine white breadcrumbs

Instructions: Cut lobster tails in half lengthwise. Discard the intestine. Remove the meat from the shell and cut into cubes. Retain the shell. In a saucepan heat 2/3 of butter. Add scallions and sauté without browning. Stir in all-purpose flour. Cook, stirring, for further 1 minute, then gradually add the milk. Stir continuously over medium heat until sauce boils and thickens.

Stir in the cream, sherry, and lobster meat. Season to taste with salt and black pepper. Spoon mixture into the shells, then sprinkle with breadcrumbs and dot with small pieces of the remaining butter.

Preheat the oven to 400º F (200ºC). Bake lobster shells in the preheated oven for about 10 minutes, or until breadcrumbs are golden. Turn off the oven and remove baked lobster tails. Serve hot.

Best Broiled Lobster Tail Recipe

Ingredients

  • 4 oz (120 g) lobster tails, thawed and patted dry
  • 1 clove garlic, peeled and crushed
  • pinch of paprika
  • pinch of cayenne pepper
  • 2 tablespoons unsalted melted butter
  • 2 teaspoons freshly squeezed lemon juice

Method

Step 1

Using a sharp knife, cut lengthwise through the top shell of a lobster tail, cutting halfway through the flesh, but not through the bottom part of the shell. Spread the cut side of the shell open and pull out the meat. Close the empty shell and arrange on a baking sheet. Place the lobster meat over the empty shell. Repeat the same method with remaining lobster tails.

Step 2

In a small mixing bowl, combine remaining ingredients. Mix well and brush with spicy mixture lobster meat.

Step 3

Place the oven rack 6 inches (15 cm) below the broiler. Preheat the broiler. Broil in preheated broiler for 4-5 minutes or until tender. Serve broiled lobster with lemon wedges.
