Oysters Natural Recipe
Makes 1-2 servings
Ingredients: 12 fresh oysters, lemon wedges, For Cocktail Sauce: 1/4 cup (60 ml) ketchup, 1 teaspoon Worcestershire sauce, 2 teaspoons cream, freshly ground black pepper
Instructions: Arrange fresh oysters on a bed of crushed ice with lemon wedges. Serve with chilled cocktail sauce in the center of the plate. To make the Cocktail Sauce: In a medium mixing bowl, combine all sauce ingredients. Blend well.

Makes 1-2 servings
Ingredients: 12 fresh oysters, salt and freshly ground black pepper, 2/3 cup (160 ml) Mornay Sauce, grated Parmesan cheese
Instructions: Choose large flat oysters. Sprinkle with salt and black pepper. Place under a hot broiler for 1 minute. Spread over each seasoned oyster sufficient Mornay Sauce to cover. Sprinkle with grated Parmesan cheese. Bake in preheated (400º F (200º C)) oven for 5-10 minutes or until golden brown. Serve hot.

Ingredients
- cooking oil for deep frying
- 2 eggs
- 2 tablespoons cream
- 1 teaspoon salt and freshly ground black pepper
- 1 quart (1 kg) shucked oysters
- all-purpose flour
- cracker crumbs
Method
Step 1
Heat the oil to 380°F (190°C).
Step 2
Beat the eggs lightly and add the cream, salt, and pepper to taste. Dredge the oysters individually in flour, dip in the egg and roll in crumbs.
Step 3
Fry the oysters until golden brown, approximately 2 minutes. Drain on paper toweling and sprinkle with additional salt and pepper. Serve fried oysters with the horseradish cream and salsa.
