Broiled salmon steaks recipe. Salmon steaks with vermouth and herbs baked in the broiler.
The salmon steaks may be grilled over a charcoal grill. If you like herbed fish, you may also like Herb Baked Trout:
Herb Baked Trout Recipe
Whole trout with vegetables and herbs baked in an oven.
Makes 4-6 servings
Ingredients: 1 whole trout, 2½-3 pounds (1.44 – 1.72 kg), salt and freshly ground black pepper, 1 yellow onion, peeled and thinly sliced, 2 fresh sage leaves, 1 fresh thyme sprig, 2-3 slices bacon
Instructions: Clean the trout and sprinkle the cavity with salt and black pepper. Place the onion, sage, and thyme inside the cavity. Arrange the bacon slices over the fish and place on a piece of greased aluminum foil. Wrap up the fish and place in an ovenproof dish large enough to hold it easily. Preheat the oven to 350º F (175º C). Bake in preheated oven for 45-60 minutes.
Turn the oven off and remove baked trout. To serve, remove aluminum foil and place baked fish on a warm serving plate.
Broiled Salmon Steaks Recipe
Ingredients
- 8 fresh salmon steaks
- 3/4 cup (180 ml) dry vermouth
- 3/4 cup (180 ml) olive oil
- 1 ½ tablespoons freshly squeezed lemon juice
- 1 tablespoon minced parsley
- 3/4 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon marjoram
- 1/8 teaspoon sage
- freshly ground black pepper
Method
Step 1
Place the salmon steaks in a large cooking pan. Mix the remaining ingredients and pour over the top. Allow standing 3-4 hours, turning once.
Step 2
Remove the salmon steaks from the marinade, reserving the marinade. Place the fish on a greased broiler rack and broil until brown. Turn carefully and brown on the other side.
Step 3
Cook until fork tender, or about 5 minutes a side, with the reserved marinade. Note: The salmon steaks may be grilled over charcoal.
