Ingredients

  • 4 large potatoes, peeled
  • 2 medium carrots, peeled
  • 1/4 cup fresh peas
  • 1 pound (480 g) peeled shrimp
  • 4 hard-boiled eggs, shelled and chopped
  • 2 kosher dill pickles, cubed
  • 1 small sweet onion, peeled and finely chopped
  • 1/2 cup chopped fresh dill
  • 3/4 cup (180 ml) mayonnaise

Method

Step 1

Place a pot of boiling water on the stove and add salt. Once it starts boiling, add cubed potatoes. Cook them for 6-8 minutes or until they're tender. Remove them with a slotted spoon, and let them cool. cut into cubes

Step 2

Meanwhile, bring water back to a boil and cook carrots until soft, about 3 minutes. Remove from the heat and place in an ice bath to cool, then drain them, pat dry, and tarnsfer to a large bowl and chop them. Add peas and cook, stirring constantly, until they start to turn light green. Add them to the bowl with carrots.

Step 3

You can cook the shrimp in 1 or 2 batches depending on the size of your pot. Cook rock and medium shrimp until they are completely cooked through, for 1-2 minutes. Remove boiled shrimp from the pan and transfer them to a large bowl.

Step 4

In a large bowl, combine cooked potatoes, eggs, pickles, onion, carrots, and peas. Mix well. Add the mayonnaise and stir well again. Top with cooked shrimp and chopped fresh dill.
