Spicy Tuna-Stuffed Eggs Recipe
Makes 12 stuffed eggs
Ingredients: 6 large eggs, hard-cooked, 3 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1/4 teaspoon each: paprika, salt, a dash of freshly ground black pepper, 1/2 cup (125 ml) canned tuna, preferably packed in olive oil, finely chopped, 3 green onions, white parts only, finely chopped, 2 teaspoons canned capers, drained and minced, hot pepper sauce, sweet paprika
Instructions: Peel hard-cooked eggs and rinse under cold running water. Cut eggs in half lengthwise and scoop out the yolks, leaving the whites intact.
In a medium mixing bowl, combine egg yolks, mayonnaise, mustard, paprika, salt, and black pepper, to taste. Stir well, then add finely chopped tuna, green onions, and minced capers. Mix well.
Season to taste with hot pepper sauce. Spoon spicy filling in egg whites. Sprinkle with sweet paprika. Wrap with plastic wrap and refrigerate until ready to serve.
Tuna Tartare with Toasted Pine Nuts Recipe
Very easy, healthy, and tasty classic appetizer is made with fresh tuna fillet. Use only high-quality fresh tuna, such as sushi-grade or sashimi-grade for this recipe. Serve it with flatbread 2 cups (500 ml).
Makes 2 cups (500 ml)
Ingredients: 1 pound tuna fillet, diced, 1 tablespoon each: diced tomato, red onion, Dijon mustard, extra virgin olive oil, 2 teaspoons toasted pine nuts, coarsely chopped, 1 teaspoon finely grated lemon zest, 3/4 teaspoon finely chopped fresh basil, 1/2 teaspoon salt
Instructions: In a large mixing bowl, combine all ingredients. Mix well. Serve immediately.
Chile-Spiked Tuna Tartare Recipe
Makes 1 cup (250 ml)
Ingredients: 1 large shallot, finely diced, 1 tablespoon each: mayonnaise, finely snipped fresh chives, freshly squeezed lemon juice, extra virgin olive oil, 1 mild chile pepper, finely minced, 2 teaspoons canned capers, drained and minced, 1/2 pound (240 g) ahi tuna fillet, diced, salt and freshly ground black pepper, to taste
Instructions: In a large mixing bowl, combine shallot, chives, lemon juice, mayonnaise, olive oil, chile pepper, and capers. Stir well. Add diced tuna and toss well to coat. Season with salt and black pepper. Stir again. Wrap with plastic wrap and refrigerate for at least 30 minutes before use.
Classic Tuna Salad Recipe
Ingredients
- 1 fresh baby lettuce leaves, torned
- 7 oz (210 g) red grape tomatoes, halved
- 1 small red onion, peeled, halved and thinly sliced
- 1 red bell pepper, seeded and cubed
- 2/3 cup (160 ml) kalamata olives
- 2 tablespoons chopped fresh oregano
- 2 6 oz (180 ml) cans tuna in olive oil
- 1/4 cup (60 ml) red wine vinegar
- canned red beans, drained and rinsed
- canned green peas, drained
Method
Step 1
In a large glass bowl, combine all ingredients, except canned tuna, vinegar, and seasoning. Mix well.
Step 2
Add undrained canned tuna, then drizzle with red wine vinegar. Season with salt and black pepper. Stir well. Serve immediately.
