Slow Cooker Hamburger Vegetable Soup Recipe

makes 4-6 servings

Ingredients: 12 oz (360 g) ground beef round, 1 large yellow onion, peeled and finely chopped, 2 cloves garlic, peeled and minced, 1¼ quarts (1¼ L) low-sodium fat-free beef broth, 15 oz (450 ml) can tomato sauce, 1 cup diced potatoes, 1 cup thinly sliced carrots, 1 cup whole kernel corn, and 1 cup baby lima beans, 1/3 cup sliced celery, 2 tablespoons pearl barley, 2 tablespoons brown sugar, and 2 tablespoons cider vinegar, 3/4 teaspoon dried mustard, and 3/4 teaspoon dried thyme leaves, 1 bay leaf, salt and freshly ground black pepper

Instructions: In a large, lightly greased, nonstick skillet, cook beef, onion, and garlic over medium heat until beef is browned, for about 5 minutes, crumbling beef with a fork. In 6 quart (6 L) slow cooker, combine cooked beef mixture and remaining ingredients, except seasoning. Cover and cook on low-heat setting for 6-8 hours. Turn off crock pot. Discard bay leaf. Season soup with salt and black pepper. Ladle it into soup bowls. Serve hot.

Slow Cooker Vegetable Soup with Chili Meatballs Recipe

Spiced meatballs add the great touch to this delicious vegetable soup.

Makes 8 servings

Ingredients:

2 quarts (2 L) chicken stock, Chili Meatballs (see recipe below), 1 cup finely sliced yellow onion, 1 cup Mexican-style whole kernel corn, 3/4 cup thinly sliced carrots, 10 oz (300 g) frozen chopped spinach, thawed and drained, 4 tablespoons dry sherry, salt and freshly ground black pepper

Instructions: In 6 quart (6L) slow cooker, combine all ingredients, except spinach, sherry, and seasoning. Cover and cook on high-heat setting for 3-4 hours, stirring spinach and sherry during the last 20 minutes. Turn off slow cooker. Season soup to taste with salt and black pepper. Serve hot in soup bowls.

Chili Meatballs Recipe

Makes 32 meatballs

Ingredients: 1½ pounds (720 g) ground beef round, 1/3 cup finely chopped yellow onion, 1/3 cup unseasoned breadcrumbs, 1 teaspoon minced garlic, 1 tablespoon chili powder, 2 teaspoons ground cumin, 1 large egg, beaten, 1/2 teaspoon salt

Instructions: In a large mixing bowl, combine all ingredients. Shape into 32 meatballs.

Easy Crock Pot Chicken Vegetable Soup Recipe

Ingredients

  • 5 cups (1.25L) chicken stock
  • 1 pound (480 g) boneless and skinless chicken breast, cut into cubes
  • 1 cup peeled and diced potatoes
  • 1 cup sliced red bell peppers
  • 3/4 cup sliced caroots
  • 1 cup thinly sliced cabbage
  • 1/3 cup sliced green onions
  • 1/3 cup sliced celery
  • 2 oz (60 g) egg noodles, cooked
  • salt and freshly ground black pepper

Method

Step 1

In a crock pot, combine all ingredients, except noodles and seasoning. Stir well.

Step 2

Close crock pot and cook on low heat setting for 6-8 hours, adding cooked noodles during the last 30 minutes. Season to taste with salt and black pepper. Stir well.

Step 3

Turn off the crock pot. Ladle soup into bowls. Serve hot.
