Grilled Chicken Paillards with Virgin Sauce Recipe
This is a classic Mediterranean recipe. Grilled chicken with basil, tomatoes, and garlic. Extremely delicious!
Ingredients: 2 whole skinless and boneless chicken breasts, 1 clove garlic, peeled and minced, 3 fresh basil leaves, minced, plus 4 basil sprigs for garnish, kosher salt and freshly ground black pepper, 2 tablespoons (30 ml) extra-virgin olive oil, Virgin Sauce (recipe follows)
Divide whole chicken breasts in half. Trim any excess fat off the chicken and discard. Remove the tenders from the breasts and set aside. Rinse the breasts under cold running water and drain well. Place a breast half between 2 pieces of plastic wrap and pound it, using a mallet, to a thickness of between 1/4-1/8inch using. Repeat with remaining breast halves.
In a small mixing bowl, combine garlic, minced basil, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper. Using the back of a spoon, mash to a paste. Stir in the olive oil.
Brush each chicken paillard on both sides with the paste, then season lightly with salt and black pepper.
Place the grill pan on the stove, then preheat over medium-high heat. When it hot, lightly grease with oil the ridges of the grill pan. Arrange the paillards in the hot grill pan. Cook for 1-2 a few minutes, turning once.
Transfer grilled chicken paillards to a serving platter. Spoon homemade Virgin sauce over, garnish with fresh basil sprigs. Serve hot.
Virgin Sauce Recipe
Makes 1 cup (250 ml)
Ingredients: 1 clove garlic, peeled and minced, 1/2 teaspoon salt, 1 large ripe tomato, seeded and diced, 6 black olives, pitted and diced, 8 fresh basil leaves, thinly silvered, 1/4 cup (60 ml) extra-virgin olive oil, 1 tablespoon (15 ml) red wine vinegar, freshly ground black pepper, to taste
Instructions: In a nonreactive bowl, combine minced garlic and salt. Using the back of a spoon, mash to a paste. Stir in remaining ingredients, adding more salt and black pepper to taste. The sauce should be highly seasoned.
Easy Homemade Egyptian Kebabs Recipe
Ingredients
- 2 whole skinless and boneless chicken breasts
- 1 tablespoon yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon turmeric
- 1/8 teaspoon dry mustard
- 1/2 teaspoon curry powder
- 1/8 teaspoon ground cardamom
- 1 teaspoon freshly squeezed lemon juice
- 1 teaspoon vinegar
Method
Step 1
Cut chicken breasts into 16 squares.
Step 2
In a large mixing bowl, combine cubed chicken yogurt, salt, turmeric, mustard, curry powder, cardamom, lemon juice, and vinegar. Mix well, set aside and allow to marinate for 1 hour.
Step 3
Thread marinated chicken cubes onto soaked bamboo skewers.
Step 4
Cook slowly, turning time from time and brushing with the marinade, over hot coals or under the broiler until chicken breasts are tender about 10 minutes. Transfer to a hot plate, sprinkle with freshly squeezed lemon juice and garnish with fresh tomatoes, fresh mint or parsley.
