Combine the salmon fillets, dry white wine, lemon juice, and zest in a freezer bag. Season to taste with black pepper. Seal, shake well, and leave in the fridge for a few hours.

Set turbo oven temperature to 482. F (250. C). Remove the salmon from the freezer bag and arrange it on a greased baking tray. Spread the pesto over the top of each salmon fillet. Place on the grilling rack of the turbo oven.
