Ingredients
- 1Β½ pounds country-style pork ribs, soaked
- 3/4 pound (360 g) pork neck bone
- 2 chunks fermented pogi kimchi, chopped
- 1 medium yellow onion, peeled and hcopped
- 4 cloves garlic, peeled and sliced
- 1/2 cup chopped green onions (green parts only)
- 1 ginger stick, sliced
- 2 tablespoons red chili flakes
- 2 tablespoons doeng jang
- 1 tablespoon raw cane sugar
- 2 cups (500 ml) water
- 2 tablespoons gukganjang (Korean soup soy sauce)
- 1 teaspoon sea salt
- 1/2 teaspoon ginger powder
- 1/8 teaspoon freshly ground black pepper
Method
Step 1
Wash the pork and pat dry with paper towels. In a small mixing bowl, combine the sea salt, black pepper, and ginger powder. Mix well. Add the pork to the dry mixture and rub it well. Set aside for 15 minutes.
Step 2
In an instant pot, place the first layer of pork, then add kimchi, then add the rest of the pork meat bones. Add the remaining ingredients, except the soy sauce. Stir well.
Step 3
Close thepot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 30 minutes.
Step 4
Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Switch to the saute mode, then stir in soy sauce.
Step 5
Close the lid and saute for a few minutes. Turn off the cooker and open the lid. Using tongs, remove kimchi and pork from the pot and transfer to a large plate. Drizzle with sauce. Garnish with chopped scallions. Serve hot.
