Ingredients
- To Make a Dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon yeast
- 1 teaspoon granulated sugar
- 3/4 cup (180 ml) water at room temperature
- For Filling:
- 2 cups ground pork
- 1/4 cup minced onion
- For the Sauce:
- 1 tablespoon light soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sugar
- 1/2 cup (125 ml) very warm water
- 1 tablespoon cornstarch
Method
Step 1
In a small mixing bowl, combine soy sauce, oyster sauce, hoisin sauce, sugar, cornstarch, and 1/2 cup (125 ml) very warm water. Stir well.
Step 2
Add ground pork and onion to the instant pot. Turn the cooker to the sauté mode and sauté until pork browned. Add the sauce and sauté, stirring occasionally, for a further 5 minutes.
Step 3
Remove cooked pork and sauce from the pressure cooker and set aside. Using a paper towels, clean the instant pot liner and dry.
Step 4
In a medium mixing bowl, combine the water, yeast, and sugar. Mix well. Slowly add the flour to the mixture until it forms a ball. Knead the dough for 5 minutes, then add salt and continue kneading until the dough is smooth.
Step 5
Cover the dough, set aside and allow it to rise until double in size, for about 45 minutes.
Step 6
Using a roller, roll the dough on a flour coated surface. Using a 4-5 inches (10-12.5 cm) circle cookie cutter, cut the dough.
Step 7
Place the filing at the center of each circle of dough. Gather the sides, then pinch to seal.
Step 8
Pour 1 cup (250 ml) into the instant pot. Arrange a metal trivet in the bottom of the pot.
Step 9
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 3 minutes.
Step 10
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Remove cooked dumplings from the cooker and transfer to a serving plate. Serve hot.
