Ingredients

  • 2 teaspoons olive oil
  • 4-6 oz (120-180 g) Mozzarella cheese
  • To Make a Sauce:
  • 28 oz (840 ml) can diced tomatoes
  • 1 small yellow onion, peeled and diced
  • 1 garlic clove, peeled and minced
  • 1 tablespoon Italian seasoning
  • To Make a Meatballs:
  • 1 pound (480 g) ground beef
  • 2 tablespoons Italian seasoning
  • 1 large egg, beaten
  • 2 tablespoons almond flour
  • 1 garlic clove, peeled and minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method

Step 1

In a large mixing bowl, combine all meatball ingredients. Mix well. Scoop 2-4 tablespoons of the beef mixture, then flatten the ball in the middle.

Step 2

Add Mozzarella cheese to the center of the flattened meat. Shape stuffed the beef mixture into a ball. Repeat with remaining meat.

Step 4

Add all sauce ingredients to the pressure cooker and mix well Return the meatballs. Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 7 minutes.

Step 5

Using the Quick Release method, bring pressure to normal. Carefully open the lid. Stir meatballs well before serving. Serve over the cooked pasta or mashed potatoes.
