Ingredients

  • 1 cup (250 ml) water
  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 3/4 cup dry potato flakes
  • 1 tablespoon chopped chives
  • freshly ground balck pepper, to taste
  • cayenne pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter

Method

Step 1

In a large mixing bowl, combine water, beaten egg, and salt. Whisk until salt has dissolved.

Step 2

Add dry potato flakes and mix until incorporated. Stir in chopped chives, then season to taste with black pepper and cayenne pepper.

Step 3

Heat the vegeatable oil and butter in an electric instant pot turned to the saute mode. Divide potato mixture into 4 equal portions. Shape into pancakes. Add to hot oil and cook for a few minutes, turning once, until lightly browned.

Step 4

Cover the pot and lock the lid. Set the machine to cook at high pressure. Set the timer tocook for 10 minutes.

Step 5

Serve hot.

    This makes no sense. You need water or non-oily liquid for the pressure to build. Why not just use a frying pan????
