Ingredients
- 3 pounds (1.44 kg) beef chuck roast, cut into 3 pieces
- 1 teaspoon salt
- 2/3 teaspoon freshly ground black pepper
- 1/2 of large yellow onion, peeled and chopped
- 3 cloves garlic, peeled
- 1/2 cup (125 ml) dry red wine
- 1 teaspoon dried thyme
- 3 tablespoons brown gravy mix
- 1 tablespoons all-purpose flour plus 3 tablespoons water

Method
Step 1
Season the beef with salt and black pepper. Heat a couple of tablespoons of olive oil in an electric instant pot turned to saute mode. Add seasoned meat, one at a time, and sear until browned, for about 2 minutes per side.
Step 2
Remove browned beef from the cooker and transfer it to a large plate. Add a little more olive oil to the pot. Add onions and cook, stirring occasionally, for 30 seconds.
Step 3
Pour in the red wine and deglaze the instant pot, by scrapping all browned bits from bottom of the cooker. Add garlic cloves and thyme. Mix well. Pour in 1½ cups water and stir through. Stir in the brown gravy mix until dissolved.
Step 4
Place seared beef pieces in the gravy. Pour some liquid on the top of meat. Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 45 minutes.
Step 5
Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Using tongs, remove cooked beef and transfer it to a bowl. Cover with aluminum foil to keep warm.
Step 6
Switch the cooker to saute mode again. Allow the cooking broth to simmer for 10 minutes, stirring occasionally.
Step 7
In a small mixing bowl, combine all-purpose flour and water. Whisk until the flour is dissolved. Stir the flour mixture into the gravy. Using two forks, shred the meat, then pour the gravy over it. Serve with mashed potatoes and cooked vegetables. Enjoy!
