Ingredients

  • extra-virgin olive oil
  • 1/2 teaspoon dried sage
  • 3/4 cup (180g ) dried cranberries
  • 1/2 cup (125 g) orange marmalade
  • 1/2 cup (125 ml) freshly squeezed orange juice
  • 2 tablespoons fresh chives, chopped
  • salt and freshly ground black pepper, to taste

Method

Step 1

Preheat your oven to 400 F (200C).

Step 2

Rub pork tenderloins with and season with salt, black pepper, and sage.

Step 3

Preheat a large ovenproof saute pan to a medium-high heat and lightly grease with olive oil. Add seasoned pork tenderloins and brown on all sides. Place browned meat to the preheated oven and roast for about 10-15 minutes or until internal temperature reaches 135 F (70C ).

Step 4

Remove roasted pork tenderloins from the oven and cover with aluminum foil.

Step 5

Meanwhile, in a small sauce pan, combine dried cranberries, orange marmalade, and orange juice. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until thick and glossy (for about 10 minutes). Remove cranberry mixture from the heat. Add chopped chives and season to taste with salt and black pepper. Stir well.

Step 6

Slice roasted pork tenderloins in medallions. Pour cranberry sauce over the meat and serve!
