Pozharsky cutlets. Skillet-fried chicken cutlets. A very delicious Russian chicken recipe. You may also like Breaded Chicken Cutlets
- 3½ lb (1¾ kg) skinless and boneless chicken breasts,minced
- 1 cup white crumb,soaked in milk
- 6 tablespoons milk
- 2 tablespoons breadcrumbs
- 1 cup butter
- 1 egg,beaten
- salt & freshly ground black pepper to taste
Squeeze out excess liquid from the soaked crustless bread. Add minced chicken meat and mix well. Add salt, freshly ground black pepper and 1 tablespoon of melted butter. Divide into oblong cutlets.
Dip in egg and cot thoroughly in breadcrumbs.
In a large skillet, preheat remaining butter. Fry Pozharsky cutlets in hot butter for 5 minutes each side until the breadcrumbs are crusted.
Cover with lid and cook on low-heat setting for another 5 minutes. Serve Pozharsky cutlets hot.
