Ingredients

  • 3 pounds (1.44 kg) chicken wings, separated
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons Chinese cooking wine
  • 2 cups (500 ml) coca cola
  • 2 tablespoons chopped garlic
  • 2 tablespoon chopped green onions
  • salt and 1 tablespoon freshly ground black pepper
  • 2 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • red pepper flakes, to taste

Method

Step 1

Season chicken wings with salt and 1 tablespoon of black pepper.

Step 2

In a mixing bowl, combine the remaining ingredients. Mix well.

Step 3

Place seasoned chicken wings and soy mixture in a pressure cooker. Close the pot and lock the lid Set the machine to cook at high pressure. Set the timer to cook for 15 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Open the cooker and, using tongs, remove cooked chicken wings, reserving cooking liquid. Set aside. Ladle out about half of the cooking liquid and discard. Press the start button on the pressure machine to start the healing process.

Step 5

To thicken the sauce, add 2 tablespoons of butter and 2 tablespoons of all-purpose flour. Mix it thoroughly and let it reduce down and thicken to where the sauce will coat a spoon and not drip off immediately. It takes approximately 10 minutes.

Step 6

Once the sauce is thick enough, return the cooked chicken wings to the pot and mix it, so it gets a nice sauce bath. Remove from the pressure cooker and serve immediately.
