Ingredients
- 1 pound (480 g) corned beef, cubed
- 1½ cups (375 ml) low-sodium fat-free beef broth
- 1½ cups coarsely shredded cabbage
- 2 potatoes, peeled and cubed
- 1 large yellow onion, peeled and chopped
- 1 cup each chunked carrots and celery
- 2 cloves garlic, peeled and minced
- 1/2 cup (125 ml) dry red wine
- 2 teaspoons brown sugar
- 1 ½ teaspoons cider vinegar
- 1 ½ teaspoons dried thyme leaves
- 1/2 teaspoon dry mustard
- salt and freshly ground black pepper to taste
Method
Step 1
In a slow cooker, combine all ingredients, except salt and black pepper. Mix well.
Step 2
Cover slow cooker and cook on low-heat setting for 6-8 hours or until cubed beef is tender.
Step 3
Turn off the slow cooker. Allow the stew to cool for a few minutes. Season with salt and black pepper, to taste.
Step 4
Transfer beef cabbage stew with any accumulated juices to a serving platter. Serve accompanied by dry red wine, if desired.
