Ingredients

  • 2-3 tablespoons all-purpose flour
  • 1½ pounds (720 g) diced beef
  • 3/4 pound (360 g) potatoes, peeled and diced
  • 1 yellow onion, peeled and sliced
  • 7 oz (210 g) massaman curry paste
  • 1²⁄³ cups (400 ml) chicken stock
  • 2 cups (500 ml) coconut cream
  • 2 tablespoons fish sauce
  • freshly squeezed juice of 1/2 lemon
  • 1 tablespoon light brown sugar
  • 1 bay leaf
  • 2-3 nutmegs
  • dash of roasted peanuts

Method

Step 1

Place diced beef on a large plate. Coat the meat in the flour and set it aside.

Step 2

Place the potatoes and onions in a slow cooker. In a large mixing bowl, combine the massaman curry paste, chicken stock, coconut cream, fish sauce, lemon juice, and brown sugar. Stir well.
